Truffles
Truffles are a type of chocolate confection. They begin with a soft chocolate center that is a mélange of chocolate, butter or cream, and various flavorings, spices, or fruits. This mixture is called ganache.
The ganache is then shaped and coated with cocoa powder, chopped nuts, flavored sugars, or enrobed in tempered chocolate. Finishing swirls and markings, or edible decorations add visual interest and a hint of the treasure each jewel contains.
1. Semi Sweet Chocolate
ˇBanana - nut: silken banana ganache with crunchy, toasted peanuts.
ˇRaspberry : Decadent raspberry ganache, kissed with raspberry eau-de-vie, finished in bittersweet cocoa.

2. Milk chocolate

ˇPear - Fennel: Sweet pears matched with the delicate anise flavor of fennel, enrobed in milk chocolate.
ˇLiu: smooth milk chocolate ganache infused with cinnamon, star anise, ginger, clove and white pepper.
3. White chocolate
ˇCoconut-Lime: lime white chocolate ganache kissed with dark rum, rolled in toasted coconut.
ˇTurndot: named for the Ice Princess, a white chocolate - passion fruit filled pearl with an icy finish.
ˇMadam Butterfly: a tantalizing blend of ginger and apricot, with a touch of saké.
