Caramels/Toffee
Caramel is a mixture of sugar, syrup, and milk, cream, or butter. The rich, chewy consistency of a caramel is affected by the temperature that the sugar mixture is cooked to, or by the amount of dairy product added. Nuts and spices can be added to enhance the flavor, even salt! Created from mountain wildflower honey from Colorado, the finest hand-harvested sea salt and pure cream, these incomparable caramels are a labor of love.

Toffee is very similar to caramel in ingredients, though less dairy is used, and is usually cook to a very high temperature to create the classic crunchiness. All of our toffees incorporate the finest quality nuts, gently toasted to bring out their subtle aromas and enhance flavor.

1. Caramels

·Savoie: salted butter caramels, finished in bold dark couverture and French fleur de Sel.

·Honey caramels: created from mountain wildflower honey harvested in Colorado enrobed in bittersweet Belgian chocolate.

·Hawaiian: macadamia nut packed caramel dipped in exceptional semi-sweet chocolate.

2. Toffee

·Almond: crunchy butter toffee, rich milk chocolate and toasted almonds the classic combination.

·Coconut-Cashew: crunchy toffee swathed in exotic Indonesian semi-sweet chocolate, dusted with chopped cashews and toasted coconut.

·Molasses-Walnut: a tantalizingly rich molasses based toffee with milk chocolate and toasted walnuts.
